Cake Batter:

  • 2 cups all-purpose flour (spoon & level)

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1½ tsp ground cinnamon

  • ¾ cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs (room temperature)

  • ⅓ cup vegetable oil (or melted butter/coconut oil)

  • 1 cup sour cream (or Greek yogurt/buttermilk)

  • 1½ tsp vanilla extract

  • 2 cups apples, peeled & chopped (Granny Smith + Honeycrisp recommended)

  • 1 tbsp flour (for tossing apples)

Streusel Topping:

  • ½ cup all-purpose flour

  • ⅓ cup brown sugar

  • 1 tsp ground cinnamon

  • ¼ cup melted butter

  • Optional: ¼ cup chopped walnuts or pecans

Glaze (optional):

  • 1 cup powdered sugar

  • 12 tbsp milk or apple cider

  • ¼ tsp vanilla extract


Instructions

 

  1. Preheat & Prep Pan
    Preheat oven to 350°F (175°C). Grease and optionally line an 8×8 or 9×9-inch pan with parchment paper.

  2. Mix Dry Ingredients
    In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Set aside.

  3. Make Wet Batter
    In a large bowl, whisk together eggs, brown and white sugar, oil, sour cream, and vanilla until smooth.

  4. Combine Wet & Dry
    Add dry ingredients to wet in batches and stir until combined. The batter will be thick.

  5. Add Apples
    Toss chopped apples in 1 tbsp flour. Gently fold into batter.

  6. Make Streusel Topping
    Mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly. Fold in nuts if using.

  7. Assemble & Bake
    Spread batter evenly into the prepared pan. Sprinkle streusel on top.
    Bake for 40–50 minutes, or until a toothpick comes out clean. Cool in pan for 15 minutes.

  8. Optional Glaze
    Whisk glaze ingredients until smooth. Drizzle over cooled cake before serving.
