Ingredients
Cake Batter:
2 cups all-purpose flour (spoon & level)
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1½ tsp ground cinnamon
¾ cup brown sugar
½ cup granulated sugar
2 large eggs (room temperature)
⅓ cup vegetable oil (or melted butter/coconut oil)
1 cup sour cream (or Greek yogurt/buttermilk)
1½ tsp vanilla extract
2 cups apples, peeled & chopped (Granny Smith + Honeycrisp recommended)
1 tbsp flour (for tossing apples)
Streusel Topping:
½ cup all-purpose flour
⅓ cup brown sugar
1 tsp ground cinnamon
¼ cup melted butter
Optional: ¼ cup chopped walnuts or pecans
Glaze (optional):
1 cup powdered sugar
1–2 tbsp milk or apple cider
¼ tsp vanilla extract
Instructions
Preheat & Prep Pan
Preheat oven to 350°F (175°C). Grease and optionally line an 8×8 or 9×9-inch pan with parchment paper.Mix Dry Ingredients
In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Set aside.Make Wet Batter
In a large bowl, whisk together eggs, brown and white sugar, oil, sour cream, and vanilla until smooth.Combine Wet & Dry
Add dry ingredients to wet in batches and stir until combined. The batter will be thick.Add Apples
Toss chopped apples in 1 tbsp flour. Gently fold into batter.Make Streusel Topping
Mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly. Fold in nuts if using.Assemble & Bake
Spread batter evenly into the prepared pan. Sprinkle streusel on top.
Bake for 40–50 minutes, or until a toothpick comes out clean. Cool in pan for 15 minutes.Optional Glaze
Whisk glaze ingredients until smooth. Drizzle over cooled cake before serving.
