This fresh and crunchy kale salad is a healthier take on the Chick-fil-A favorite—loaded with greens, roasted almonds, and a tangy-sweet apple cider vinaigrette. Naturally gluten-free, perfect for clean eating, and ready in minutes!
Ingredients
For the Salad:
4 cups chopped kale (stems removed)
2 cups thinly sliced green cabbage
½ cup roasted slivered almonds
For the Dressing:
3 tbsp apple cider vinegar
¼ cup olive oil
1 tbsp Dijon mustard
1 tbsp maple syrup (optional)
Salt & pepper, to taste
Instructions
Prep the Greens
Rinse kale and cabbage under cold water. Remove tough stems from kale and chop into bite-sized pieces.Massage the Kale
Add 1 tsp olive oil to the kale and massage for 2–3 minutes to soften and reduce bitterness.Make the Vinaigrette
In a small bowl or mason jar, whisk or shake together apple cider vinegar, Dijon mustard, olive oil, maple syrup (if using), and a pinch of salt and pepper.Assemble the Salad
In a large bowl, toss the massaged kale, cabbage, and roasted almonds. Drizzle dressing over the top and toss to coat evenly.Chill & Serve
Let the salad chill for 10–15 minutes in the fridge before serving to boost flavor and crunch.
