Ingredients
4–5 large russet potatoes, scrubbed
Vegetable oil, for frying
Seasoning blend:
1 tsp sea salt
½ tsp smoked paprika
½ tsp garlic powder
Pinch black pepper
Instructions
1. Slice the Potatoes
Use a mandoline with a waffle blade.
Rotate the potato 90° after each slice to create the waffle pattern.
Slice to about ¼ inch thick for that classic Chick-fil-A texture.
2. Soak the Slices
Place the waffle-cut slices in cold water.
Soak for 30 minutes to remove excess starch.
Drain and pat completely dry with towels.
3. First Fry
Heat oil to 325°F (160°C).
Fry the potatoes in batches for 3–4 minutes until slightly tender but not browned.
Let them rest on a wire rack or paper towel.
4. Second Fry
Increase oil temp to 375°F (190°C).
Fry again for 2–3 minutes, or until crispy and golden.
Immediately season with your spice blend.
