Ingredients

 

  • 2 lbs boneless, skinless chicken thighs (or breasts)

  • 2 tbsp olive oil

  • 2 sweet onions, thinly sliced

  • 2–3 bell peppers, sliced (any color)

  • 2 cloves garlic, minced

  • 2 tbsp Italian seasoning

  • 8 slices provolone cheese

  • 4 hoagie rolls

  • Salt & pepper, to taste

Optional Variations:

  • Spicy: Add chipotle mayo or pepper jack cheese

  • Mediterranean: Swap cheese for mozzarella, add feta, olives, and tzatziki


Instructions

 

 

  1. Prep the Chicken:
    Thinly slice the chicken. Season with salt, pepper, and Italian seasoning.

  2. Cook the Chicken:
    Heat 1 tbsp olive oil in a skillet or griddle over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Set aside.

  3. Sauté Veggies:
    In the same skillet, add remaining oil and sauté onions and peppers for 4–5 minutes. Add garlic during the last 30 seconds.

  4. Combine & Melt:
