A lean, flavorful twist on the classic cheesesteak, this chicken Philly sandwich is loaded with seasoned chicken, gooey cheese, and sautéed veggies—all packed into a toasted hoagie. Perfect for weeknights or game-day feasts!
Ingredients
2 lbs boneless, skinless chicken thighs (or breasts)
2 tbsp olive oil
2 sweet onions, thinly sliced
2–3 bell peppers, sliced (any color)
2 cloves garlic, minced
2 tbsp Italian seasoning
8 slices provolone cheese
4 hoagie rolls
Salt & pepper, to taste
Optional Variations:
Spicy: Add chipotle mayo or pepper jack cheese
Mediterranean: Swap cheese for mozzarella, add feta, olives, and tzatziki
Instructions
Prep the Chicken:
Thinly slice the chicken. Season with salt, pepper, and Italian seasoning.Cook the Chicken:
Heat 1 tbsp olive oil in a skillet or griddle over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Set aside.Sauté Veggies:
In the same skillet, add remaining oil and sauté onions and peppers for 4–5 minutes. Add garlic during the last 30 seconds.Combine & Melt:
Return chicken to the skillet, stir to combine with veggies, and layer cheese on top. Cover and let the cheese melt.Toast & Assemble:
Toast hoagie rolls with a brush of olive oil. Fill each with the cheesy chicken-veggie mix. Serve hot.
