Ingredients
2 lbs boneless, skinless chicken thighs
8 hoagie rolls
8 slices provolone cheese
2 tbsp olive oil
1 tbsp Italian seasoning
1 tsp garlic powder
1 tsp paprika
Salt and black pepper, to taste
1 large sweet onion, thinly sliced
2 bell peppers (any color), thinly sliced
1 cup sliced mushrooms (optional)
1 tbsp butter
Optional toppings: pickled jalapeños, roasted red peppers, crispy onions
Instructions
Prepare the chicken: Partially freeze the chicken to slice thinly. Season with Italian seasoning, garlic powder, paprika, salt, and pepper.
Marinate: If time allows, marinate with olive oil and lemon for 30 minutes to overnight.
Cook the chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook the chicken until golden and internal temp reaches 165°F (about 5-7 minutes). Remove and set aside.
