Ingredients
Classic Chipotle Black Beans
2 (15 oz) cans black beans, drained and rinsed
2 tbsp olive oil
1 red onion, chopped
2 garlic cloves, minced
1 tbsp chipotle in adobo
1 tsp smoked paprika
½ tsp oregano
Salt to taste
Creamy Coconut Chipotle Black Beans
2 cups cooked black beans
1 cup full-fat coconut milk
1 tbsp chipotle in adobo
½ tsp cumin
Salt to taste
Roasted Butternut Squash Fusion
1 medium butternut squash, cubed
2 cups black beans
2 chipotle peppers, minced
3 tbsp olive oil
1 tsp smoked paprika
Salt and pepper to taste
Instructions
Classic Style:
Heat olive oil in skillet. Sauté onion until soft.
Add garlic, chipotle, paprika, oregano. Cook 1 min.
Add beans. Simmer 10–15 mins, mash some for creaminess.
Season and serve.
Creamy Coconut:
Combine beans, coconut milk, chipotle, and cumin in pan.
Simmer on low heat, stirring occasionally.
Let rest. Serve with rice or in grain bowls.
Butternut Squash Fusion:
Preheat oven to 425°F. Toss squash with oil, paprika, salt.
Roast 25–30 mins. Combine with beans and chipotle in skillet.
Heat through and serve warm.
