Ingredients
Base:
8 large egg whites
¼ cup cottage cheese
¼ tsp baking powder
Salt & pepper, to taste
Add-ins:
½ cup red bell pepper, finely diced
½ cup fresh spinach, chopped
¼ cup shredded cheese (Gruyère, cheddar, or feta work great)
Olive oil spray, for the pan
Instructions
Preheat your oven to 325°F (163°C). Lightly spray a muffin tin or use a silicone mold. For easy removal, use liners in a metal pan.
In a blender, combine egg whites, cottage cheese, baking powder, salt, and pepper. Blend until frothy for that light, fluffy texture.
Pour the mixture evenly into the muffin cups (¾ full). Top with diced peppers, chopped spinach, and shredded cheese.
Place a dish of hot water on the bottom oven rack. Bake the bites for 20–25 minutes, or until just set in the center. Let them cool 5 minutes before removing.
Notes
- For dairy-free: use unsweetened almond milk and skip the cheese.
- Don’t skip the water bath! It makes the bites soft and moist.
- Use silicone molds for easy release and no sticking.
- Bites puff in the oven, then settle—totally normal!
