Instructions
Season the Chicken: Rub the chicken with salt, pepper, and half of the taco seasoning. Let it sit for 10 minutes.
Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Sear chicken for 4–5 minutes per side. Set aside (it won’t be fully cooked yet).
Sauté Aromatics: In the same skillet, add diced onion and cook for 3 minutes until soft. Add garlic and stir for 30 seconds.
Build the Base: Stir in diced tomatoes, black beans, corn, and remaining taco seasoning. Nestle the chicken into the sauce.
Simmer: Cover and simmer on low for 15–20 minutes until chicken is cooked through and tender.
Shred & Finish: Remove the chicken, shred with forks, and return it to the pan. Stir in lime juice and any optional cheese.
