Ingredients
2 cups all-purpose flour (or gluten-free blend)
1 tsp baking soda
½ tsp salt
1½ tsp ground cinnamon
¼ tsp ground nutmeg (optional)
1 cup granulated sugar
½ cup brown sugar
2 large eggs
½ cup vegetable oil (or coconut oil)
2 tsp vanilla extract
3 cups chopped apples (Honeycrisp, Granny Smith, or a mix)
½ cup chopped walnuts or pecans (optional, toasted for extra flavor)
Instructions
Preheat & Prepare Pan
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.Mix Dry Ingredients
In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.Combine Wet Ingredients
In a large bowl, beat eggs. Add granulated sugar, brown sugar, oil, and vanilla. Stir until smooth.Add Apples
Stir chopped apples into the wet mixture.Combine
Gradually stir dry ingredients into the wet ingredients until just combined. Fold in toasted nuts if using.Bake
Pour batter into the prepared pan. Bake for 40–45 minutes or until a toothpick inserted comes out clean.Cool & Serve
Let cool in the pan for 15 minutes before transferring to a wire rack. Slice and enjoy!
