Ingredients
2 ripe avocados
¼ cup unsweetened cocoa powder
½ cup maple syrup
¼ tsp vanilla extract
Pinch of sea salt
½ cup gluten-free granola
¼ cup whipped coconut cream
¼ cup fresh raspberries
Instructions
Make the mousse: In a blender, combine avocados, cocoa powder, maple syrup, vanilla, and sea salt. Blend until smooth and creamy. Chill for 1 hour.
Assemble the parfaits: In 4 small jars or glasses, layer 2 tablespoons of mousse, 1 tablespoon of granola, and 1 tablespoon of coconut cream.
Repeat layers if desired, and finish with fresh raspberries on top.
Chill for 30 minutes before serving for the best flavor and texture.
