Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Juice of 1 lemon
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, sliced

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt, pepper, Italian seasoning, and lemon zest.
  • Add the chicken to the skillet and cook for 5–6 minutes per side, until golden and cooked through.
  • Remove the chicken and set aside.
  • In the same pan, add garlic, cherry tomatoes, zucchini, and bell pepper.
  • Sauté for 3–4 minutes until vegetables are tender.
  • Squeeze lemon juice over the dish and return the chicken to the pan.
  • Serve hot and enjoy!
