- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- Juice of 1 lemon
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, sliced
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, Italian seasoning, and lemon zest.
- Add the chicken to the skillet and cook for 5–6 minutes per side, until golden and cooked through.
- Remove the chicken and set aside.
- In the same pan, add garlic, cherry tomatoes, zucchini, and bell pepper.
- Sauté for 3–4 minutes until vegetables are tender.
- Squeeze lemon juice over the dish and return the chicken to the pan.
- Serve hot and enjoy!
