  • 1 lb boneless chicken breast (or thighs)
  • 3 medium carrots, chopped into 1-inch pieces
  • 3 medium potatoes, peeled and chopped
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth (low-sodium)
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 1 cup frozen peas

Instructions

  • Layer the chopped potatoes, carrots, and onion at the bottom of the crockpot.
  • Place the chicken breast on top of the vegetables.
  • Add the garlic, diced tomatoes, and chicken broth over the chicken and vegetables.
  • Sprinkle the thyme, rosemary, salt, and pepper over the top.
  • Set the crockpot to low and cook for 6-8 hours or until the vegetables are tender and the chicken is fully cooked.
  • About 30 minutes before serving, shred the chicken with two forks and stir in the frozen peas.
  • Let the stew cook for the remaining time until the peas are tender, then serve hot.
