- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 1 cup frozen peas
Instructions
- Layer the chopped potatoes, carrots, and onion at the bottom of the crockpot.
- Place the chicken breast on top of the vegetables.
- Add the garlic, diced tomatoes, and chicken broth over the chicken and vegetables.
- Sprinkle the thyme, rosemary, salt, and pepper over the top.
- Set the crockpot to low and cook for 6-8 hours or until the vegetables are tender and the chicken is fully cooked.
- About 30 minutes before serving, shred the chicken with two forks and stir in the frozen peas.
- Let the stew cook for the remaining time until the peas are tender, then serve hot.
