For the Chicken:

  • 1 boneless, skinless chicken breast
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp olive oil

For the Spicy Maple Sauce:

  • 2 tbsp maple syrup
  • 1 tbsp sriracha (adjust for spice preference)
  • 1 tsp Dijon mustard
  • ½ tsp apple cider vinegar

For the Sandwich:

  • 1 everything bagel (or your favorite type, toasted)
  • ½ ripe avocado, mashed
  • ¼ cup baby arugula (or spinach)
  • 1 slice pepper jack cheese
  • 2 tbsp red onion, thinly sliced

Instructions

Step 1: Cook the Chicken

  1. Butterfly the chicken breast so it cooks evenly.
  2. Season with smoked paprika, garlic powder, salt, and pepper.
  3. Heat olive oil in a pan over medium heat and cook the chicken for 4-5 minutes per side, until golden brown and fully cooked.
  4. Remove from heat and let it rest for 2 minutes before slicing.

Step 2: Make the Spicy Maple Sauce

  1. In a small bowl, mix maple syrup, sriracha, Dijon mustard, and apple cider vinegar until well combined.

Step 3: Assemble the Sandwich

  1. Toast the bagel for extra crunch.
  2. Spread mashed avocado on the bottom half.
  3. Add the cooked chicken slices and drizzle with spicy maple sauce.
  4. Layer pepper jack cheese, baby arugula, and red onion for extra crunch and spice.
