- 1 tbsp sriracha (adjust for spice preference)
- 1 tsp Dijon mustard
- ½ tsp apple cider vinegar
For the Sandwich:
- 1 everything bagel (or your favorite type, toasted)
- ½ ripe avocado, mashed
- ¼ cup baby arugula (or spinach)
- 1 slice pepper jack cheese
- 2 tbsp red onion, thinly sliced
Instructions
Step 1: Cook the Chicken
- Butterfly the chicken breast so it cooks evenly.
- Season with smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a pan over medium heat and cook the chicken for 4-5 minutes per side, until golden brown and fully cooked.
- Remove from heat and let it rest for 2 minutes before slicing.
Step 2: Make the Spicy Maple Sauce
- In a small bowl, mix maple syrup, sriracha, Dijon mustard, and apple cider vinegar until well combined.
Step 3: Assemble the Sandwich
- Toast the bagel for extra crunch.
- Spread mashed avocado on the bottom half.
- Add the cooked chicken slices and drizzle with spicy maple sauce.
- Layer pepper jack cheese, baby arugula, and red onion for extra crunch and spice.
