They’re easy to meal prep, customizable with your favorite ingredients, and freezer-friendly for grab-and-go convenience.

Ingredients

Scale
  • 6 large eggs (or egg whites for a lighter version)
  • ¼ cup milk (optional, for creamier eggs)
  • 1 cup shredded cheddar cheese (or mozzarella, feta, or gouda)
  • 6 slices bacon or 6 breakfast sausage patties (or plant-based alternatives)
  • 6 English muffins or biscuits, halved (gluten-free or whole wheat if preferred)
  • ½ cup chopped vegetables (spinach, bell peppers, mushrooms, onions, tomatoes)
  • Salt & pepper, to taste
  • Cooking spray, butter, or oil (for greasing the muffin tin)

Instructions

  • Prepare Your Muffin Tin:
Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray, butter, or oil. Silicone muffin liners work well for easy cleanup.

  • Add Your Ingredients:
Place cooked bacon or crumbled sausage at the bottom of each muffin cup. Add chopped vegetables for extra color and nutrients.

  • Mix and Pour:
In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture evenly into the muffin cups, filling each about ¾ full.

  • Bake:
Bake for 18–20 minutes, or until the eggs are set and slightly golden. For extra flavor, sprinkle cheese on top halfway through baking.

  • Assemble the Sandwiches:
Let the egg muffins cool slightly, then layer each one on a halved English muffin or biscuit. Add extra cheese, spreads, or toppings if desired.

  • Serve or Store:
Enjoy immediately, or cool completely before wrapping in foil or storing in an airtight container. Refrigerate for up to 5 days or freeze for up to 2 months.

Notes

  • Make-Ahead Tip: Double the batch and freeze for up to 2 months.
  • Reheating: Microwave refrigerated sandwiches for 30–60 seconds or frozen sandwiches for 1–2 minutes. For a crispier texture, reheat in a toaster oven at 350°F for 8–10 minutes.
  • Flavor Variations:
    • Mediterranean: Feta, sun-dried tomatoes, and spinach.
    • Southwest: Chorizo, black beans, bell peppers, and pepper jack cheese.
    • Veggie Delight: Mushrooms, zucchini, spinach, and goat cheese.
