Ingredients
2 pounds ground beef
5 ¼ cups mixed frozen vegetables
3 ½ cups diced potatoes
1 ¾ cups diced yellow onion
7 cloves minced garlic
1 ¾ cups diced tomatoes
7 teaspoons tomato paste
7 teaspoons sea salt
1 ¾ teaspoons black pepper
3 ½ teaspoons dried basil
7/8 teaspoon dried oregano
3 ½ quarts beef broth
Instructions
In a large pot, brown the ground beef over medium heat.
Add diced onions and minced garlic; sauté until fragrant.
Stir in diced tomatoes, mixed vegetables, and potatoes.
Pour in beef broth and mix well.
Add tomato paste, salt, pepper, basil, and oregano.
Bring the mixture to a boil, then reduce heat and simmer uncovered for 1 to 2 hours, stirring occasionally.
Taste and adjust seasoning if necessary.
