Ingredients

  • 1.5 lbs ground beef (85% lean) – or substitute with turkey or pork

  • 1 cup bread crumbs – use Panko or crushed crackers

  • ½ cup milk – or broth or plant-based milk

  • 2 large eggs

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • ½ cup ketchup – or BBQ sauce

  • 1 tbsp Worcestershire sauce

  • Salt & pepper to taste

Optional Add-ins:

  • ½ cup shredded cheese

  • 1 grated carrot or zucchini

  • 1 tsp Italian seasoning or smoked paprika


Instructions

  1. Mix Gently

In a large bowl, combine all ingredients. Mix just until combined—don’t overwork it. Let rest for 5 minutes.

2. Shape & Sear

Form the mixture into a loaf and flatten slightly. Heat 1 tbsp oil in a large skillet over medium heat. Sear the loaf for 3–4 minutes per side until browned all over.

3. Simmer & Steam

Reduce heat to low. Add ¼ cup water or broth to the skillet. Cover with a lid and simmer for 30–40 minutes. Add more liquid as needed. Use a meat thermometer to check for 160°F internal temp.

4. Glaze & Finish

 

Brush with ketchup or glaze of choice during the last 10 minutes. Remove lid and cook uncovered for caramelization. Let rest 10 minutes before slicing.

  1. Letting it rest before slicing keeps it juicy.
  2. Use a cast iron or heavy-bottomed skillet for even cooking.
  3. Add herbs to the liquid for subtle infused flavor.
