Strawberry Puree Recipe: Fresh, Simple & Perfect for Every Dish

  • Author: Camila
  • Total Time: 5–10 min
  • Yield: About 1¼ cups 1x

Description

This homemade strawberry puree is sweet, vibrant, and effortlessly smooth. Perfect for drizzling over pancakes, mixing into cocktails, swirling through yogurt, or layering in desserts. With just a few ingredients and 5 minutes of prep, it’s a flavor-packed staple you’ll want in your fridge at all times.

Ingredients

Scale
  • 2 cups strawberries (fresh or thawed frozen, hulled)

  • 1 tbsp lemon juice

  • 12 tbsp sugar or honey (optional, adjust to taste)

  • 12 tbsp water (optional, to thin for drizzling or drinks)

Instructions

Add strawberries, lemon juice, and sugar to a blender. Blend on high until completely smooth (about 30 seconds).

2. Adjust the Texture
Add 1–2 tbsp water if needed for a thinner sauce, especially for cocktails or pancake drizzle.

3. Optional: Strain
For a silky-smooth finish, strain the puree through a fine mesh sieve to remove seeds.

4. Store or Serve
Use immediately or store in a jar in the fridge for up to 5 days. Also freezer-friendly!

Notes

  1. For a cooked version, simmer the ingredients for 8–10 minutes before blending for a richer texture and longer storage.
  2. Add a splash of vanilla for dessert use, or fresh basil for savory pairings.
  3. Try it in cocktails like strawberry mojitos or mocktails!
